Mediterranean Halibut

Serve this delicous fish with rice pilaf!

Ingredients

  • 4 halibut steaks (6 to 8 ounces each)
  • 4 roma tomatoes, medium
  • ½ c. crumbled Feta cheese
  • 2 tsp. Basil Leaf
  • 2 tbsp. olive oil
  • 2 tbsp. black olives, chopped
  • 3 tbsp. lemon juice
  • ¼ c. white wine
  • 2 tsp. Minced Onion
  • ½ tsp. Garlic Powder

Directions

  1. Heat oven to 425ºF .
  2. Combine tomatoes, olives, onion, basil, garlic, olive oil, lemon
    juice and white wine in a medium bowl; set aside.
  3. Place halibut in a non-stick baking pan. Top with tomato mixture; sprinkle feta cheese over tomatoes. Bake 12 to 14 minutes, or until fish flakes easily with a fork.

Tips

You may substitute tuna or swordfish fillets for the halibut.
