Dill and potatoes are a natural combination.

Dill Potato Soup

INGREDIENTS

1 tablespoon butter OR margarine
1 cup chopped onion
2 cups cubed peeled potatoes (approximately 2 medium)
2 cups chicken broth
1/8 teaspoon Durkee® Garlic Powder
1/2 cup half-and-half
1 teaspoon Durkee® Dill Weed
salt and pepper, optional

DIRECTIONS

Heat butter over medium-high heat in saucepan until hot; cook and stir onion 3 to 5 minutes or until tender.  Add potatoes, chicken broth and garlic powder; bring to boil. 

Reduce heat; simmer 12 to 15 minutes or until potatoes are tender.  If desired, transfer to blender or food processor container; process until smooth.  Return to pan; heat to simmering.

Remove from heat; stir in half-and-half and dill weed.  Season with salt and pepper, as desired.  Serve hot or chilled.
