This is a 'chunkier' chili version.

Chicken Chili

INGREDIENTS

1 tablespoon corn oil
1 small onion, chopped
1/2 cup chopped green bell pepper
1 pound boneless, skinless chicken breast, cut into bite size pieces
1 can (15 ounces) diced tomatoes
1 can (15 ounces) kidney beans, drained
1 can (8 ounces) tomato sauce
2 tablespoons soy sauce
1-1/2 tablespoons Durkee® Chili Powder
1/2 teaspoon Durkee® Garlic Powder

DIRECTIONS

Heat oil in skillet over medium high heat. Add onions and peppers; stir fry 5 minutes or until tender. Remove vegetables from skillet; set aside.
Add chicken to skillet and stir fry 5 to 7 minutes or until no longer pink in center. Return vegetables to skillet.

Stir in tomatoes, beans, tomato sauce, soy sauce, chili powder and garlic powder. Bring to a boil; reduce heat and simmer, uncovered, for 12 to 15 minutes.

Serve with shredded cheddar cheese, if desired.

Recipe Note:  1 pound turkey tenderloin or 1 pound ground beef may be used in place of chicken.
