Calabacitas (Little Squash)

INGREDIENTS

1 tablespoon corn oil
1 pound zucchini, sliced
1/2 pound yellow crookneck squash, sliced
1 tablespoon Durkee® Minced Garlic
1 package (10 ounces) frozen corn
1 can (4.5 ounces) chopped green chiles
2 teaspoons Durkee® Ground Cumin
1 teaspoon Durkee® Basil Leaf
1/4 teaspoon Durkee® Cayenne Pepper
1/8 teaspoon salt

DIRECTIONS

Heat oil in a large skillet over medium-high heat. Add squash; stir-fry for 5 minutes or until crisp-tender. Add garlic and corn; stir-fry for 3 minutes. Add chilies, cumin, basil, cayenne and salt; cook 2 minutes or until heated through.

Serve with chicken, pork or beef.

Recipe Note:  For a spicy dish, increase cayenne to 1/2 or 1 teaspoon.
