Almond adds a delicious twist on a traditional macroon cookie.  And, it is gluten free!

Almond Macaroons

INGREDIENTS

4 egg whites at room temperature
1/2 teaspoon Durkee® Cream of Tartar
1 cup sugar
1/4 teaspoon salt
3/4 teaspoon Durkee® Pure Almond Extract
1/3 cup finely chopped almonds
1 cup flaked coconut

DIRECTIONS

Preheat oven to 325°F.  Line several baking sheets with parchment paper (using parchment paper is strongly recommended as cookies will not come off unlined baking sheets easily).

Combine egg whites and cream of tartar in a large mixing bowl.  Beat with electric mixer until foamy.  Gradually add sugar and salt, beating until stiff peaks form.  Fold in almond extract, almonds and coconut.

Drop by teaspoonfuls 2-inches apart on parchment lined baking sheets.  Bake for 15 to 18 minutes or until delicately browned.
