Southwestern Steak Salad

INGREDIENTS

3 tablespoons olive oil, extra virgin
3 tablespoons water
1 teaspoon Durkee® Coarse Ground Black Pepper
1 teaspoon Spice Islands® Lemon Peel
1 teaspoon Durkee® Crushed Red Pepper
1/2 teaspoon salt
1 pound boneless beef sirloin steak, cut into 1/4-inch strips
Dressing
3 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon lemon juice
1/2 teaspoon Durkee® Crushed Red Pepper
1 package (10 ounces) mixed salad greens
1 medium yellow bell pepper, seeded and cut into thin strips
1 medium red bell pepper, seeded and cut into thin strips
3/4 cup slightly crushed tortilla chips

DIRECTIONS

Combine 3 tablespoons olive oil, water, black pepper, lemon peel, 1 teaspoon crushed red pepper and salt in resealable plastic bag; mix well. Add steak; seal bag.  Marinate 10 minutes (or up to 24 hours in refrigerator).

Mix 3 tablespoons olive oil, soy sauce, lemon juice, and 1/2 teaspoon crushed red pepper in a small bowl; set aside.

Remove meat from bag; discard marinade. Grill 2 to 3 minutes, over medium heat, per side.

Place salad mix in a large bowl. Top with beef, peppers, and dressing. Sprinkle with tortilla chips.

Recipe Note:  To broil, place beef on rack in broiler pan so beef is 3 to 4 inches from heat.  Broil 3 to 4 minutes or until no longer pink in center, turning once.
