Burrito Pizzas

INGREDIENTS

As needed, corn oil
6 (10-inch) flour tortillas
1  pound ground beef
1 cup water
1 package DurkeeĀ® Original Burrito Seasoning Mix
1-1/2 cups prepared salsa
1-1/2 cups chopped tomatoes
3 green onions, chopped
1 yellow bell pepper, cut into strips
1/2 cup sliced jalepeno peppers, if desired
1-1/2 cups Cheddar or Monterey Jack cheese, shredded

DIRECTIONS

Heat 1/4-inch deep oil in a large skillet over high heat. Fry tortillas, one at a time, in hot oil until lightly browned, turning once. Drain on paper towels.

Drain oil form skillet; add ground beef and brown over medium-high heat. Stir in water and burrito mix. Bring to a boil; reduce heat, cover, and simmer 10 minutes, stirring occasionally.

Meanwhile, spoon 1/4 cup salsa onto each tortilla. Spread meat mixture evenly on the 6 tortillas. Top each pizza with equal amounts of tomatoes, green onions, bell pepper, jalapeno peppers, and cheese. Broil pizzas on a baking sheet, 2 at a time, for 1 to 2 minutes or until cheese melts and begins to brown.

Recipe Note: Tortillas can be baked in oven for 5 minutes instead of frying in oil.
