Beef Quesadillas

INGREDIENTS

1 package DurkeeĀ® Original Fajita Seasoning Mix
1/2 cup water
1 pound sirloin steak, thinly sliced
1 tablespoon corn oil
1 cup chopped green bell pepper
1 cup chopped onion
8 ounces (2 cups) shredded Monterey Jack/cheddar cheese blend
8 (10-inch) flour tortillas

DIRECTIONS

Combine seasoning mix and water in a shallow dish. Add meat, turning to coat. Let stand 15 minutes, turning occasionally. Remove meat from marinade; discard marinade.

Heat oil in large skillet over medium-high heat; add meat and stir-fry 3 minutes. Add vegetables and stir-fry 2 minutes or until meat is no longer pink and vegetables are tender-crisp.

Sprinkle 1/2 cup cheese and 1 cup meat mixture over 4 tortillas; top with remaining tortillas. Cook 1 quesadilla in a dry skillet over medium heat for 2-3 minutes or until lightly browned on both sides, turning once. Remove quesadilla from skillet and keep warm. Repeat with remaining quesadillas. Cut each quesadilla into 8 wedges. Serve with salsa, sour cream and guacamole, if desired.
