Chicken and Raspberry Salad

INGREDIENTS

2 tablespoons olive oil, extra virgin
2 tablespoons water
1 teaspoon Durkee® Basil Leaf
1 teaspoon Durkee® Garlic Salt
8 ounces chicken tenders
1/3 cup olive oil, extra virgin
3 tablespoons basalmic vinegar
2 teaspoons Durkee® Basil Leaf
1 teaspoon Durkee® Garlic Salt
1 bag (5 ounces) baby romaine lettuce
6 ounces fresh raspberries
1/4 cup sliced almonds, toasted

DIRECTIONS

Combine 2 tablespoons olive oil, water, 1 teaspoon basil and garlic salt in a resealable plastic bag.  Add chicken, close bag and toss to cover.  Marinate chicken 15 minutes (or longer, if desired).

Mix 1/3 cup olive oil, vinegar, 2 teaspoons basil and 1 teaspoon garlic salt in a small bowl to make dressing.  Pour chicken and marinade into a skillet. Stir-fry over medium-high heat 3 to 5 minutes or until no longer pink in center.

Place romaine on platter; top with raspberries, chicken and dressing.  Top with almonds. Serve immediately.
